
If you’ve been a regular at Waverly Charlotte, chances are you know Bagel Boys. But something new and seriously crave-worthy has taken shape in that same space. Meet THAT Cheesesteak Place, a fresh concept built from the ground up and ready to change the way Charlotte thinks about cheesesteaks.

We sat down with the team behind the brand to get the full story.
Q: What inspired the decision to transition from Bagel Boys to THAT Cheesesteak Place
A: Bagel Boys gave us an incredible foundation and a loyal customer base, and we’re extremely grateful for that support. But over time, we realized there was an opportunity to better utilize the space beyond breakfast hours and create something unique for the Charlotte market. THAT Cheesesteak Place was born out of our Bagel Boys customers loving our cheesesteaks, but outside of that, nobody thought of a bagel store for cheesesteaks. We saw an opportunity to create something that felt different from traditional cheesesteak shops — not Philly style, Charlotte style. Our OWN style.
Q: For guests who know and love Bagel Boys, what can they expect from this new venture?
A: THAT Cheesesteak Place is a completely fresh concept with its own identity, menu, and energy. While we learned a lot through operating Bagel Boys, this brand was built from the ground up with a very focused vision: simple menu execution, bold flavors, quality ingredients, and a fast, consistent customer experience. Guests can expect a more streamlined concept centered around lunch and dinner, with an emphasis on doing a few things exceptionally well instead of trying to be everything to everyone.
Q: What makes your cheesesteaks stand out from others in the Charlotte area?
A: We’re not trying to be a copy of a traditional Philly cheesesteak spot — our goal is to build a Charlotte cheesesteak concept. Our sandwiches are intentionally overbuilt, packed with high-quality meat, melted cheese throughout, and served on seeded rolls that hold everything together the right way. We focus heavily on consistency, flavor, and efficiency so guests get the same great experience every time.
Q: Can you share a few must-try menu items people should be excited about?
A: Absolutely. Our Ribeye Cheesesteak is the foundation of the menu and probably the best introduction to what we do. The Buffalo Chicken Cheesesteak has quickly become a customer favorite, and our Garlic Parmesan Cheesesteak brings a completely different flavor profile that people don’t expect, and that cannot be found anywhere else in the city. Guests also love our house-made Truffle Snaps, which pair perfectly with any sandwich.
Q: When can the community officially experience the new concept, and is there anything special planned for the launch?
A: We quietly began our soft opening on May 1 to give our team time to fine-tune operations, gather feedback, and make sure every detail is right. Our Grand Opening is planned for May 30, and we’ll have special promotions, giveaways, and a fun atmosphere to celebrate with the community. We’re incredibly excited for people to finally experience what we’ve been building!
